MSW Durian Muffins

Total Time: 50 m
Makes: 9 standard sized muffins
Ingredients:
300g Plain flour
100g Sugar
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
75g Butter (melted)
1 Egg (beaten)
175g Milk
300g Durian Puree / flesh
Method:
Step 1:
Preheat oven to 190 degree C. Mix all dry ingredients. Flour, salt, baking soda, baking powder and sugar. Set aside.
Step 2:
Beat butter, egg, milk and half the amount of durian puree by hand.
Add wet ingredients to dry ingredients.
Step 3:
Fill the muffin liner with some batter, add durian puree and top it up with more batter till the liner is 3/4 full.
Bake 25 to 30 minutes or until toothpick inserted into cupcake comes out clean. Cool in pans on wire rack 5 minutes. Remove from pans; cool completely. Enjoy!
